Unpizza Pizza With Gravy - Cooking With Angie


Its been a while since I had to create a meal and I have to say I got this one from a couple people, well the idea and then I tossed all of it together and made a meal for my cancer patient.

The treatments makes it hard for him swallow and he gets a lot of acid on his stomach so here goes.....

What you`ll need :

1- package pizza crust mix - deep dish

1 - can of mushrooms sliced

1 - package of mozzarella cheese

1/2 bell pepper chopped

1/2 onion chopped

1/2 pound cooked hamburger meat, scrambled

1/2 teaspoon Italian season

1/2 teaspoon Garlic powder

Flour

Salt


Lets make the unpizza pizza :

Prepare the crust using the directions on the package. 

Open the mushrooms and pour into a strainer to drain.

In a skillet cook the hamburger meat over medium heat with the bell pepper and onion. Season with the Italian seasoning and garlic. 

Remove the cooked meat mixture to a paper towel to drain off the grease.

With the grease leftover from the meat mixture add the flour and make a rue for the gravy, cook till light brown. Add enough water to make it thick, sprinkle with salt. Set aside.


To make the unpizza apply cheese first, straight to the crust. then add the meat mixture, top with mushrooms and then top with a generous amount of cheese. 

Bake at 400° for around 10 minutes or till the cheese is lightly brown.

Cut and serve with a bowl of the gravy. 

How to eat :

Slice the unpizza in this slices and dunk the unpizza into the gravy and enjoy!

Now how did I come about this dish?

The nurse keeps saying " if you eat bread, soak it in gravy." and "do not eat tomato products."

Tony wanted pizza so he told me to make one with no sauce.

This is what I got and he loved it.

Easy Homemade Biscuits - Only Three Ingredients!

Nothing says home to me more than a fresh hot homemade biscuit! And what makes it even better you never knew that they were made with only three ingredients!
My older friend, age 17, taught me how to make biscuits when I was 14 years old and I have been cooking them since. Not everyday like I used to do when I was much younger, now its a treat to have homemade biscuits.
What may be surprising is how simple it is to make biscuits and with only three ingredients.
~ Lets get started ~
You`ll need :
2 cups of Self rising flour
1/2 cup of Vegetable Shortening
1/4 cup Buttermilk - [whole milk will do if you don`t use buttermilk]
First - Preheat oven to 350°


Next spray a baking pan or cookie sheet with Pam, set aside.


In a bowl add 2 cups of self rising flour, make a dip in the middle because that is where we will make the biscuits.


Add the 1/2 cup of vegetable shortening.


Now, using your hand slowly toss the flour over and into the shortening, smashing it with your fingers.

When you have mixed it with most of the flour it`ll look like this.

Now add the buttermilk and mix more with your hand , squeezing it between your fingers and it will began to form a ball. When all the buttermilk is absorbed toss around with your hand and you are ready to pinch into biscuits.

Take and pinch off pieces of dough and gently shape into a biscuit.


Place in the prepared baking pan or cookie sheet, and with a damp hand pat the biscuit. This wets down the dough so it will not have a flour coat.
Place into a hot preheated oven and bake for about 15 minutes OR until golden brown.


See now wasn`t that easy?! 
Now comes the decision,  how to eat the biscuits?  do you just have them with butter? Or maybe jelly? What about with a piece of meat inside? Or maybe one of my all time favorite ways to eat a biscuit and that is with gravy on top!

How to make Tomato Gravy

Cooking comes easy to some of us, especially those of us who grew up in a single parent home because it was the situation " if you are hungry, go cook it!" Microwaves back then were for the rich, the average household and the poorer households  did not have them so I learned to cook on a stove, both gas and electric.
Another staple was biscuits and gravy because its a cheap meal but filling and would get you going with your day.
Some are not used to hearing about fruit [yes tomatoes are fruits] added with gravy but I will tell you that its delicious and worth a try, or two.
~ Lets get started ~
You`ll need :
1/2 cup of self rising flour
1/3 cup vegetable oil
1 1/2 cups of water
1 - 14.5 oz. can of diced tomatoes
Salt and black pepper to taste
In a large no. 8 cast iron skillet [any large skillet will do] add the oil and heat over medium heat. Add the flour and mix with the oil. Sprinkle lightly with salt and black pepper.
Cook the flour till light brown, stirring constantly. This is called making rue.
Remove from the heat and add the can of diced tomatoes, stirring mixing the tomatoes with the rue, this will become super thick and that is alright. Slowly add the water, stirring constantly.
The gravy should be of medium consistency, if you like it thinner, add more water slowly stirring with each addition. 
How to serve :
You can serve the gravy over any type of bread but the best is biscuits, with a side of jam or jelly.
For a full breakfast add a meat of your choice and eggs.

How To Cook Fresh Water Fish

For most people in central Alabama going fishing is a way of life, either for enjoyment as a catch and release activity or for food. I am the one who loves to go fishing for food.
There are many different species of fish here in the rivers, ponds and lakes but as most people I have a few that enjoy catching and enjoy even more as dinner.
With Bream, sometimes referred to as sunfish, being my favorite, that is not always what is eaten for dinner around here. Bream are small fish and I remove the head and guts and cook them whole, but most people are spoiled to the fillets that are boneless so I tend to fry up those, especially when I am shopping in the deep freezer.
Crappie and Bass are by far my favorite fish to make dinner with, both have a sweet taste and a nice texture that is flaky but not tough.
Catfish is it for a lot of people but I tend to want to eat this one whole also, its not my favorite but I will not turn fried catfish away.
Last night I shopped the deep freezer and I pulled out a package of lake caught bass, I put them into lukewarm water to thaw and this usually only take ten minutes.
Next I put extra virgin olive oil in a cast iron skillet and cut the heat up to medium.
I poured some flour into a deep bowl, added a little salt and I removed the fish from the water and tossed each in the flour.
When the oil was hot I put only enough fish in the skillet to cover the bottom in a single later. When the edges were turning brown I flipped it over to cook the other side, when the edge was brown its done I removed it from the skillet and to drain on a paper towel lined plate. I repeated the process till I cooked all the fish.
But what is fish without home cooked oven fries? Plain fish and thats all.
Lets do spicy oven fries!
Preheat the oven to 450°
Took a baking sheet out and coated the bottom with a thick coat of extra virgin olive oil. Set it aside.
Wash potatoes good and dry with a hand towel, Cut the potatoes into thin slices and then cut them into thick shoestring potatoes.
Put them onto the greased cooking sheet .
Sprinkle garlic powder, season salt and red pepper over all the potatoes. ( easy on the red pepper its very hot)
Toss into the oil using your hands, coating them with the oil and spices.
Bake till they are getting crispy, around 30 minutes.
NOTE: Put the potatoes on to cook first because they take longer to cook than the fish.
Now that is a fish and fries meal you will enjoy, with the flaky simple tasting fish and the potatoes with the seasoning that kicks.
